Elbows Mac n Cheese

Ingredients

1 package Yo Mama Elbow Pasta

1 cup full fat cottage cheese

1 cup heavy cream

1 cup freshly grated cheddar cheese

1 Tablespoon arrowroot powder or cornstarch

1 teaspoon salt

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon paprika

¼ teaspoon black pepper

Chopped fresh parsley, for garnish

Instructions

  1. Cook the pasta according to the package directions. Drain.
  2. Add the remaining ingredients to a blender and blend until smooth.
  3. Transfer the cheese mixture to a large skillet and heat on medium for 1-2 minutes until smooth.
  4. Add the pasta and toss well.
